After a long day of work I need a quick dinner to combat my hunger. I loved the fact that this recipe was quick, easy, and delicious. The potatoes were really filling and there was a ton of flavor.This recipe was a no brainer for my reboot.I was able to stay on track and satisfied for a warm and savory meal. Add an egg on top when you’re not rebooting for an extra boost of protein!

ingredients

  • 3 cups diced frozen potatoes
  • 3 bell pepper diced
  • 2 cups mushrooms
  • 1 cup frozen corn
  • 1 tbsp olive oil
  • 1-2 cloves diced garlic
  • 2 tbsp salsa
  • 1/2 avocado
  • 1/2 cup chopped cilantro

Directions

Saute oil and garlic. Then add the frozen potatoes and cook till slightly golden. Remove from pan.

Saute the bell peppers, mushrooms and frozen corn.

Add potatoes back in and mix in cilantro.

Top with salsa and avocado. Add salt and pepper for taste.
