ingredients

  • 4 potatoes
  • 2 cups mushrooms
  • 1 cup vegetable broth
  • 2 tbsp coconut flour
  • 2 tbsp balsamic vinegar
  • 1/2 cup chopped leek
  • 1/2 cup green onion
  • 1-2 minced garlic cloves
  • 1-2 tbsp olive oil

Directions

Peel and boil 4 potatoes

Mash potatoes till creamy consistency

Saute mushrooms till tender with olive oil and garlic

Add chopped leek and green onion saute till tender

Add vegetable broth, coconut flour, and balsamic vinegar
